During the study of living things students learn about 4
macromolecules-proteins, lipids, carbohydrates, and nucleic acids. In
this activity students investigate and discover where three of the
four macromolecules are found...in different food substances.
Creating Coacervates
Students mix a carbohydrate solution with a protein solution, adjust
the pH, and view coacervates: amoeba-like objects, which change shape,
flow, merge, divide, form "vacuoles", release "vacuole contents", and
show other life-like properties.
Eating Healthy
At the end of a 3-day period, students will tabulate calories, fat
content, type of fat, sugars, protein, and minerals based on their
individual diets.
Body Fat: Carrying Your Calories
Want to get away from it all? Go mountain hiking? Now's your
opportunity. Plan a three-day backpacking trip to the Rocky Mountains
in Colorado. Your trip will involve climbing, carrying, eating,
cooking, and sleeping. All these activities will challenge your body's
supply of and demand for calories. Plan what you'll pack for your trip
as if your life depended on it.

Identifying Food Nutrients
You have just started a job as a food-quality tester. Your task will
be to develop a kit to test foods for sugar, starch, protein and
lipids. The test kit will be used by dietitians who will analyze foods
to create nutritional menus for hospital patients. Your first
assignment is to demonstrate proficiency using standard tests for
nutrients in foods.
